Hi guys, 

I have a bradley smoker and I have done goose jerky before, but by way of grinding it and using a jerky gun.  I would like to also know how to make goose jerky by just slicing goose breast and making the jerky out of just the slices.  So I am just looking for some advice or recipes people like for goose jerky.

B, I would debone the breasts so that you have two halves and cut lengthwise into strips of equal size. Any recipe for jerky that catches your eye could be used as a brine for your strips. good luck and let us know how it goes !

Here are two you can try:

Marinade:

1/2 C  Soy Sauce

1 Bulb Fresh Garlic

2 T Brown Sugar

2 T Ketchup

1/2 C Worcestershire Sauce

1 1/4 t Salt

1/2 t Onion Powder

1/2 t Ground Black Pepper

Or:

2 C Teriyake Sauce

2 T Tobasco Sauce

2 T Liquid Smoke

2 T Black Pepper

2 T Garlic Powder

1 T Meat Tenderizer

1 T Mrs. Dash

1 T Red Pepper...To Taste
