I love homemade bacon, but I buy when I'm out.

Found this at Sam's Club and I really like it.

$5.60 a pound.

Picked up 7.5 pounds for the freezer today.

That looks great Bill. I’d probably buy that just to try it. Just good buckboard bacon. Looks delicious.

Never found that at local Sam's.
Wondering what "center cut" actually means from a shoulder.
I tried buckboard bacon once and it was not my taste.
From the googalator:
Pork collar, also known as pork neck or collar butt, is a cut of meat from the shoulder of a pig, specifically the upper portion of the shoulder between the neck and loin. It's a boneless, center-cut portion of the pork butt, often described as a "center cut boneless pork butt". This cut is known for its marbling and flavor, making it versatile for various cooking methods like smoking, roasting, or braising.

I've made buckboard quite a few times myself and it's good but not my favorite. Local Sam's here shows it in stock. May have to give it a try. Sounds good.

The bacon looks a lot like the type of bacon I see used a great deal in cookbooks and TV shows on British cooking. Very meaty.
