I love homemade bacon, but I buy when I'm out.

Found this at Sam's Club and I really like it.

$5.60 a pound.

Picked up 7.5 pounds for the freezer today.

Never found that at local Sam's.
Wondering what "center cut" actually means from a shoulder.
I tried buckboard bacon once and it was not my taste.
From the googalator:
Pork collar, also known as pork neck or collar butt, is a cut of meat from the shoulder of a pig, specifically the upper portion of the shoulder between the neck and loin. It's a boneless, center-cut portion of the pork butt, often described as a "center cut boneless pork butt". This cut is known for its marbling and flavor, making it versatile for various cooking methods like smoking, roasting, or braising.

I've made buckboard quite a few times myself and it's good but not my favorite. Local Sam's here shows it in stock. May have to give it a try. Sounds good.
