I'll be cooking spare ribs today! The UDS is getting quite a workout this weekend. I did turkey drumsticks and a pork butt on Saturday. While that was smoking,  I started the soak on venison jerky (6 lbs) and twenty five lbs of venison sausage. Going to put sausage in casings today! This is not helping with my diet!
 
Well te ribs are Finished! Soaked in brine, so tender I can't stand it!

Brined ribs? Never thought of doing that. Did you use any cure#1 or just the ol salt and sugar routine?
 
salt, brown sugar, orange juice, orange soda, ginger sauce, bourbon. We are done eating and boy am I full!
