What are you using to monitor bbq and meat temps? 8.5 Hours for an 8.5 lb butt is really on the short end. You may have been cooking at a higher temp then you think.
Ya it was boneless forgot to mention that. I didnt realize it was until we pulled them both off and they just fell apart. We started pulling and there was no bone. Im guessing that had somthing to do with it. Because my temp guages are reading perfectly.
