Feels like it's been ages since my last long smoke. In actuality, it's only been 10 days, but excited to get one of my first projects done, for a friend.

First starting off with the salmon, I will be doing a spread and then continue smoking until right texture etc.

Then the butts. Going to do a little variety. Chopped, pulled and shredded pork.

Then the brisket......

Going to be a busy few days for the smoker.

 
GAME OVER!!!

6yr old fridge decided it was time to quit.


This is 10 hrs into it. I sent pork butt over for a friend to have, since it wouldn't be done till at least 1am.

16lb brisket IT was 56 degrees and who knows how long it sat like that. It was a beauty.......{Taps plays in the background}
