Do the collagen casings naturally crinkle up more than the natural casings?

It just depends on how you finish. If you cold water right from the smoker you wont get a bunch of wrinkle or if you used a binder to reduce shrinkage.

These i took from the smoker at an IT of 150 and just hung them, they will IT to 152 on their own.

I gave half to my son. i just normally eat the cutoff ends. These went to a guy here in the resort.

Spaten Beir stix.
Got 5lbs mixed and cured. Going thru one of my totes i found the un opened PSS stick mix, so why not use some up. 85/15 ground beef.

I add the dry in layers and mix by hand. Make sure you flatten the beir some first.
