Hi all. When calculating time for smoking do you use total weight or weight of each individual piece. For example, two 8 lb butts and two 8 lb pot roasts. 12 hours, right?

I use 1.5 hours per # to include the rest time. If I have 2 8# pieces of meat I am using 12-14 total hours including rest time after the smoke. Pork and brisket sometimes take longer and I figure almost 2 hours for them - smoking at 225
Yep all of that and don't forget a resting time. The only other thing I would add is if you overload your smoker and do not have good air flow it will effect the time as well. It will increase the time.I use 1.5 hours per # to include the rest time. If I have 2 8# pieces of meat I am using 12-14 total hours including rest time after the smoke.
