Fer starters I am doing Crazyhorse's meatloaf with a bit of a twist.
Instead of the canned mushrooms I am going to saute some sliced baby bellas with the onion and some finely chopped green pepper along with a large clove of garlic minced in some evoo and I will be substituting Monterey Jack for the shredded Mozzarella in the meat. I am thinking about putting tomato slices on the meatloaf under the Swiss Cheese topping.
Additionally I will be doing up two pork butts for sammies later and a couple of racks of spares. Got a couple of fatties to throw on and I will be making breakfast sammies for the folks with grilled English muffins, fattie slice, an egg (cooked in an egg ring) a bit of bacon and cheddar cheese slices top and bottom.
I got a butt and a brisket hanging out in the cooler together with a huge wad of towels around them. Two fatties on the ecb right now....1 pizza and 1 bratwurst w/onions & cheese. Oh, and about 30 ABT rats have invaded my smoker.....
