doing some game hens and csr's for a short smoke.........


in at 4:00...


averaged around 250 deg..........


2 hrs later crisped up the skin on the grill.......


added some smoked taters............


time to eat!

took a little over 2 hrs since i couldn't get the temp over 300.
 
you guys are true gourmet chefs. I dont think I have seen anything on here that looked bad.

That looks like a tasty plate of food!What did you use to rub the birds down?
 
about 2 hrs @ 250........if i would have gotten it up to 300 deg it would have been around 1.5 hrs. also if you noticed i spatchcocked the birds but i left in the back bone on for flavor and moistness with these little hens.
