OK so i've always done my ss in the oven until i got my new smoker for xmas. EXCITED!!! Before i always mixed everything and rolled it in foil. Well this year i wanted to try casings so i purchased a bunch of the 2 1/2" ones. I have done them once in the oven and then today in new smoker and having the same problem. I cant get the texture to come out right. It's more like summer meat loaf!!! I have tied the open end closed and once left them open.... all the same results... PLEASE help
