Frozen Brine

I picked up some pork belly to turn into bacon. Using Pops brine, I stuck it in the fridge; promptly forgot about it. Pulling it out after the 10 day mark tonight, apparently my mini fridge went on overdrive and some of the brine is frozen. I'm waiting for it to thaw right now to see how far down it froze. Did I just mess up the curing of the pork belly?

I don't think its messed up but it may not be fully cured you should give it a few more days at 36⁰-40⁰ curing will basically stop when you get that cold.

Keep a thermometer in your fridge... Primarily for FOOD SAFETY...
