So I had a Bradley 4 rack digital smoker for about 7 years and I had it down as far as smoking pork and poultry. Well I moved back in August and during the move my Bradley was damaged, the control and smoker unit were smashed beyond repair and since I had it for 7 years the door gaskets and a few other things were pretty much done. I was just going to get another Bradley but after some online research I ended up buying a Masterbuilt 20075315 40 inch glass door smoker. It showed up yesterday and I seasoned it last night, I must say Im pretty impressed with the fit and finish of the Masterbuilt. I like the included probe and the remote is very cool. My questions are how different will the Masterbuilt be from my old Bradley? I am hoping I wont have a steep learning curve.
Im going to smoke some baby-back ribs this weekend as my first smoke in the Masterbuilt and I am excited. How accurate is the probe on the Masterbuilt? I am use to using a remote stat and probe. Im thinking I will use both of them for this first smoke. I really liked the "pucks" I used to use with the Bradley, anyone ever use the pucks in a Masterbuilt? (I have a bunch left over). With my old Bradley I used to hold a rib fest every year where I would pre-smoke about 20 racks of ribs and then heat em all up on the BBQ grill during the party, looking to something similar with the new Masterbuilt!

The below Index should help with that learning curve.
It has a lot of info on the MES, and a whole mess of Step by Steps that include all details:

The first 2 things your going to want to get are a good dual probe therm, cause the MES controllers & meat probes are very inaccurate. The second thing you will want is an Amazen tray. It will burn pellets or sawdust & give you continuous smoke for 10+ hours. That will make it a truly set & forget setup. No more adding chips every 45 minutes.
