Looks good. I love smoked potatoes and onions. I ways had salt, pepper, chili powder, and some garlic.

I love Taters and Onions. It was one of my Dad's favorites too. Probably why I love them.
Adding Smoke sounds great!

How big is your CI pan? I discovered a small one today. And since I'm working on my CI, I naturally grabbed the little feller up for cleaning and seasoning. My little booger might make a good single serving pan.
 
I think it was about 8" pan,I have a pile of CI and only cut 2 small taters a 1 large onion,a table spoon of lard and wish it had been bacon grease ,salt and fresh ground pepper,been on Vacation and not been watching the carbs and sugars like I should be,bought a small tub of lard awhile back for some thing and didn't get around to using it,olive oil or coconut most of the time

Well Mike, vacation is short enough as it is, without worrying too much about your intake. I don't think I've ever used lard. Canola Oil mostly, now. I bought a bottle of EVOO a while back, and just cracked it open to season some Cast Iron. I got told how it wasn't good for cooking and bla-bla-bla....
Told her I was using it on my cast iron to re-season it. Olive oil doesn't go rancid like the other oils can.
Yeah, we use to save our bacon grease for cooking. Love the flavor it imparts.
Seems like everything we eat, drink, or breath, is bad for us.
Maybe we are listening to the wrong advice. :confused::rolleyes:
