I decided to give the WSM another go with some chicken thighs.

Took the skin off so I could make some crispy chicken skins for the side. Put em on a wire rack at 375 for 45 mins with Jamaican lemon pepper.

Rubbed the thighs with some Sweet and Smokey. Threw em on cooked for about 2 1/2 hours between 225-260. Still learning how to temp control but did better this smoke. Lathered the thighs with some Kenders BBQ sauce the last 45mins.

Thought I'd share how they turned out!

Looks nice! Tonight is an overnight brisket for me. 11lbs, prime, and I'm expecting 13 hrs at 235-250. Should come off at 10:00am with plenty of rest time.

Great idea doing the skins by themselves.
