I picked up a 10lb bag of chicken wings at Sam's Club the other day and today was the day I decided to smoke them. Prepped the Humphrey's Pint with some brickett charcoal and some cuts from Jack Daniels barrel staves for the smoke wood. Going hot smoke at 350 to 375* on this one. 10 pounds of wings fit on 2 rack with plenty of room for more on each rack. Figuring this smoker has 8 racks (and I bought the full set for sausage smoking), I can do a very large batch of wings if I need to. Temps will be handled by the BBQ Guru DigiQ2 and it held temp rock steady.

So after about 2 hours, here we are....

Yep, made for a tasty supper with plenty left for another day. So sauce, just Meat Church "The Gospel" rub, some heat and smoke...

Looks great. You could chill then down then put in a light dredge and flash fry. Nice SmoFried Wings
 
Nice looking wings. Great snack food for a Super Bowl weekend, I also like the flash-fry idea for the leftover wings. Cornstarch and flour would be may go-to for the dredge. Maybe reinforce the rub seasoning a bit.
