G'Day Bruces... PIC HEAVY! So Sorry 
When I picked up a flank at CostlyCo last week I thought it might be worth making Chimichurri for the first time.
So I did.
Fresh picked Parsley from my garden was the inspiration!
Bit of a Whiz.
To my untrained eye, this looked pretty good and it sure tasted fantastic!
On to the Flank.
This is a great price for Downside Up Land.
Hit it with my Tommy Gun. Basically a pure Salt and Pepper blend. Terrific name for it!
Let that rest in the fridge for a few hours before... Whacking it on a screaming hot WGA.
And of course, there are the obligatory gratuitous meat and fire shots...
And off for the first rest.
15 mins later, back on to finish.
A bit of coal redistribution was required to the thin end did not over cook.
Love me some smoke..
Took it off and rested for 20 mins.
Then to the plating and bling shots.
Ohhhh yeah!
Yes I have a pool.
Then to the business end of it..
So good I sliced up a second serving.
More Chimichurri
And a fork shot fer the hell of it.
Verdict....
For me it was a little over. The coals too hot, the flippety flip not fast enough and the flank cooked past medium rare pretty fast. It was still awesome however and the Chimichurri was worth making. A perfect compliment to be honest.
