French food day! Soup and sammys.

My girlfriend and I were having breakfast this morning and I asked her what she wanted for dinner. She said she wanted French onion soup. Well she got French onion soup and French dip sammys. I also made some of Bears soft pretzels.
First time ever making either. The soup was cooking for about 6 hours.
1 stick of butter in a stock pot along with 3.5 lbs of onion/shallots. Mostly yellow onions with one big red onion and 2-3 shallots. High heat till they are softened. Then low/med heat for 4 hours till they turn a nice golden color. Then you add 2 quarts of beef stock, bring to a boil, then turn down the heat to a simmer. I added 1/2 cup dry sherry, 2 bay leaves and about 5 sprigs of thyme, salt, and pepper, 1 tbsp fish sauce, and another tbsp apple cider vinegar. I let all of that meld together at a simmer for about an hour.
Stopped by Publix for some hoagie rolls, boars head roast beef and gruyere cheese. I was feeling extra hungry so I threw together some of the best French dip sammys.
I made soft pretzels a few hours before dinner. I feel like I’m gonna pop now!
