Ernie went to the food bank a few days ago. She came home with a lot of bell peppers. She is wondering if there is a way to keep them. Can they be vacuum sealed whole? Cut them in half and pull the seeds/membrane and then freeze, after vacuum sealing?

We cut in quarters, or strips or dice. Freeze on a piece of parchment paper then vac pack and freeze. These will be good mixed into things but not by themselves. Like other peppers once frozen the texture changes. So not cooked they get a bit mushy, and once cooked even musher. So plan on using them in things like soups, sauces, stews, etc.

Thanks for the quick response. She didn't want to hear the mushy part lol.

Roasted (skin pilled, stem and seeds removed) freeze very well. You can use them for salad dressings, as condiment in dishes, pickle dish if you throw some vinegar/sugar over them. Also good on their own.

They contain so much water that freezing them just makes them mushy when they thaw.. Nothing you can really do about that but dehydrate .
