OK, I am taking your advice and getting a foodsaver - but alas, there isn't one, there are 20 different models - got the Sportsman, the Pro, the Sportsman Pro, the Chrome Sportsman Pro, etc, etc, etc.

Does anyone know the differences and which one is best suited for guys like us?

Foodsaver V2840 was recommended by one or two - why? (doesn't look like they got that one anymore)

Have you checked out their website? They will have the descriptions there and also a comparision feature if I remember correctly. As far as the best one, that would be the one that would best suit your needs and your budget.
 
It is confusing isn't it. Many of their models are virtually identical except for a cosmetic difference. Some model numbers are made exclusively for Sams Club, or Costco. I got one from Sams and it has worked great for the money. The only significant difference I was able to glean from them is that the more expensive models allow for quicker wait times between sealing. If you are doing quite a lot at one time, and don't want to wait around between sealing that might be an issue. When I do more than 25# of sausage, it can be a bit of a pain, letting it cool. I usually try to have something else to do at the same time, like cut one batch to size, while sealing another. That gives me something else to do between sealings. I think I have to wait like 25 seconds or something. Hope this helps.
 
I have two of the model V2420 one at home and one at camp and I had a different one before that the only problem I have had with them is when doing lots of sealing they overheat and need time to cool down. It doesn't hurt the machine any I guess but it will auto sense the heat and will shut down until its ready again. The only thing I would look for different than what I currently have is if they had one that would cycle more times before it needs the resting period.
 
This is the reason you would buy the $300 dollar one. Its designed for continuous sealing. It also has a dual piston pump so it pumps the air out faster and they say with more force. But if your not going to use it to seal 50 bags at once then the cheaper ones should be fine. But if you going to process alot of game and que then pony up and buy the bigger boy. Also if your going to spend that much look at the cabela's commercial one for $400.

I have the V2860 which has the ss trim on it. So far it's been very reliable. It's great for doing large quantities, however if I just have a few things to vac, I break out the Reynolds Handi-Vac. It does the job.
