Food (cheese) storage with vacuum bags

If one were to use plastic (like the bags that come on a roll in the grocery store to put vegetables in) to store cheese that has been smoked, putting the cheese in the bag, then submerging the portion of the bag containing food under water in Tupperware type container, keeping the top of the bag above the water and store that food under water in the fridge would that be as good as a vacuum bag setup? (I am thinking the plastic is so thin it the top of the bag can be keep outside the container when the lid snaps on.

I just re-read that it sounds complicated for what I am trying to describe--sorry
