Hey all!

So I am planning on using my bbq skills to do a food booth at a couple of small local fairs this summer. I am planning on doing ribs, pulled pork sandwiches and beef sticks. Just wondering if anyone out there has done anything like this and how you figure out how much food you will need? Or if there is a good way to figure that out. Obviously we want to have too much than not enough, but still not sure what that number would be (mostly concerned about the pulled pork). Thanks for your input!
 
I just put this calculator in another thread.
It gives you the raw amounts you need for any number of people.

Be sure and to apply for your health dept permit. You probably won't like what they tell you but that's way life is.
Not sure what Al's calculator will tell you but on PP I figure 3 sandwiches per LB of finished PP for a good sandwich.

Warren is right you will probably need a permit for the fair.

Pulled pork is a money maker. Ribs will take up a lot of room to smoke especially if you are selling a lot of ribs.
A couple others suggestions would pulled chicken or hot sausage sandwiches.
Once you have an idea what kind of crowd you will have at your fair. The chart Al gave you should help you figure it out what you need. Another big factor is weather.
