Just a few things I've done over the past couple of weeks. None are really worthy of a thread by themselves but the combination will keep you busy reading for a few minutes
Gonna keep the dialog to a minimum just to make it a quicker read. Fair warning though. We've had some insane hot days recently. After working outside in it all day, some of these are done inside to get a break from the heat.
First at bat is a beef tenderloin quesadilla. Had some filet mignon left from a dinner a couple nights previously so this seemed a good way to use it up. Start with a burrito sized tort, add a bunch of cheddar cheese and the beef
2nd tort on top and a can of Ro Tel tomatoes. Sprinkle with my Mexican seasoning and a little Sazon Goya. Sure turned the tomatoes a weird color
Next on deck is a simple rib eye with some basic sides.
Heated up a bone from a previous cook for Bianca
This one was really fun. Seen a few folks doing cheese steak sandwiches so did a twist on one: a Mexican version.
Sliced thin and once again seasoned with a little of my Mexican spice blend and a touch of Sazon Goya
Tracy's disjointed mess
Mine after a couple bites. They are loaded.
Next is Mediterranean themed. Greek marinated beef kabobs, orzo, a Greek zucchini salad, and grilled tomatoes. Man this was good!!
I use veggie broth in the orzo instead of water. Makes for a much better flavor.
Last at bat are smothered Mexican pork chops with rice, guacamole, and warm torts.
Smothered with melted Monterrey Jack cheese
Well that's it. Now I can get these 5 folders off the desktop and start with some new ones
All of these were 30 minutes or less to do and thought it may give folks some ideas for quick but good meals when time is short. Take care and thanks for looking.
