Just a few things I've done over the past couple of weeks. None are really worthy of a thread by themselves but the combination will keep you busy reading for a few minutes :emoji_laughing: Gonna keep the dialog to a minimum just to make it a quicker read. Fair warning though. We've had some insane hot days recently. After working outside in it all day, some of these are done inside to get a break from the heat.

First at bat is a beef tenderloin quesadilla. Had some filet mignon left from a dinner a couple nights previously so this seemed a good way to use it up. Start with a burrito sized tort, add a bunch of cheddar cheese and the beef

2nd tort on top and a can of Ro Tel tomatoes. Sprinkle with my Mexican seasoning and a little Sazon Goya. Sure turned the tomatoes a weird color

Next on deck is a simple rib eye with some basic sides.

This one was really fun. Seen a few folks doing cheese steak sandwiches so did a twist on one: a Mexican version.

Sliced thin and once again seasoned with a little of my Mexican spice blend and a touch of Sazon Goya

Mine after a couple bites. They are loaded.

Next is Mediterranean themed. Greek marinated beef kabobs, orzo, a Greek zucchini salad, and grilled tomatoes. Man this was good!!

I use veggie broth in the orzo instead of water. Makes for a much better flavor.

Last at bat are smothered Mexican pork chops with rice, guacamole, and warm torts.

Well that's it. Now I can get these 5 folders off the desktop and start with some new ones :emoji_laughing: All of these were 30 minutes or less to do and thought it may give folks some ideas for quick but good meals when time is short. Take care and thanks for looking.

Most excellent round of easy meals. Very well done and enjoy your Q-view.

Some creative and varied cooks there Robert, never a dull moment, nice work! RAY

I would be a 1000lbs if i lived in your house....never a dull meal!
We could have our own show on Discovery channel! “My 1000 pound life living in Roberts pool eating his cooking!” Now if he will put a margarita bar in next to the pool I’ll pay rent.

Nah....maybe 900 lbs but 1000 is a bit of a stretch :emoji_laughing: I don't suppose you'd believe me if I said these were all carb-free, low calorie, keto, lactose-free, heart-healthy meals would you??

Hee hee hee....I'll tell ya what Jim. You move in and start paying rent, I'll use the rent money to hire a scantily clad little college cutie to be the pool area bartender and she can ensure you never run out of margaritas :emoji_laughing:

Robert

Thanks for sharing them! Some great, different ideas!
You are more than welcome and thank you for the kind words. I do enjoy putting together a really nice meal at times but other times, ya just need something quick and these all worked for that.

Robert

Nice meals! Think I'll be joining Jim by the pool...maybe he'll pay my rent also!

Nah, not necessary. You can earn your keep by cutting grass and watering the 10,000 plants we have all over the property. The caveat is you must wear only your burlap thong while watering plants and cutting grass. The neighbors will love you for that!! :emoji_laughing:

Dude, make the rent manageable and I'll start packing! :emoji_laughing: :emoji_wink: :emoji_wink:

Some great looking meals there Robert! I’d belly up to a plate of each one. Hardest thing for me would be which one to try first. I have to start making more quesadillas, they don’t get made often enough around here.

Hmmmm....lets see....there would be 3 adults living here (at least at tax time I qualify as an adult) so how does 1/3 of the mortgage payment sound? House will be paid off soon so it'd only be for a short period of time then no more rent for you but I'll still pay the little college hottie to hang out and take care of us :emoji_wink:

Thanks so much Joe. Quesadillas are so cool to make because there's no limit to the ingredients you can put on them. Any fun combination of goodies will make a good quesadilla.
