Well, after much reading on this forum, and several "tech service" emails with Todd at A-Maze-N products, I finally fired up the Cres-Cor, Maverick 732 and a very small batch of Salmon.  Thanks to the superior customer service with Todd, and some very good reading on this forum, my son said it was excellent!

Kingfishcam, that is some mighty fine looking Salmon.  Smoked Salmon is one of my favorites.  Great work!

I did a simple brine of salt, sugar and water for 90 minutes. Pat dry and put under a fan for one hour(this could have extended), then smoked for about 3 hours at 150 I until the IT hit 145. I did bump the smoker temp up to 200 for the last 20 minutes just to shorten time.
I used apple dust and lit both sides of the AMZEN tray.
Larger batch is planned for Sunday. :)
