First Try at making jerky

So for my third ever smoke, I decided to try some jerky. Got some eye of round on sale at the local grocery store so that was perfect. Sliced it last night and created a marinade using lots of random spices. Just put it on the smoker and it's cruising at 225 - 250 right now. I'm wanting some good, strong flavour, so I'm using hickory AND mesquite to smoke. I'll check in an hour or so and update from there.

I'm no jerky expert, but I think jerky dries best at about 145 degrees.

Your just cooking the meat, not drying it out.

It might taste real good when it's done, but it won't be jerky.

I just checked our your jerky thread Al, and that jerky gun looks so friggin cool! And the jerky looked pretty amazing too. If you're not an expert yet, you will be soon enough!

Update after about an hour and a half. Like you said all...More just cooking the meat rather than drying it out. Oh well... We'll see in about 30 minutes more!

Yeah, what Al said. It may not be jerky, but should still be smoky goodness! I've made 2 runs of jerky so far, and I got a Bull Rack system for this last run. Worth every penny! You can do SO mush more jerky at one time with it. Did keep the temp around 165 four about 4 hours with all that I had on and rotating racks, but it turned out great! Good luck! Happy smoking.

It tasted pretty good. The wife and kids loved it even thought it wasn't real jerky. It was still dried out pretty good. Need to keep the temps down next time. Here's a pic of the finished product.
