A co-worker gave me a couple goose breast to make into jerky. Never done goose before so it will be interesting.
Curing with high mountain wild bird jerky kit.

I just did my first goose jerky couple weeks ago. Turned out just fine. Think I ended up dehydrating it 6 hours. I used hi mountain cracked pepper & garlic with a little extra cayenne pepper. Turned out good. Let us know how it turns out.
