First try at cornbread...it is goooood!!!

I looked at all the recipes I asked for and had at it..

Mix with homemade buttermilk.

Fried up some bacon and left the lube in the pan..(cast iron of course)

1 1/2 cup mix

1 cup buttermilk

1 egg

1 tbs oil

2 tbs turbanado

Into the hot pan and into the 425 oven..

Came out perfect for me..I am happy!!!

Prolly try some creamed corn and another tbs of sugar next time.

I know there are some who will disagree but, I say don't forget the honey butter, Just mix room temp honey with soft butter, as much as the butter will hold.

Looks great!

You can add a little leavening agent like baking powder and some salt to get it going and fluff it up a bit. Corn bread is like a pot of beans, you can put darn near anything in it to jazz it up..

Looks real good Craig ! Just one tip...when you take it out of the iron skillet give it a flip so the brown side is up...
 
Good Old Southern Cornbread is:

2 cups White Lily cornbread mix (self rising)

About a cup---or more of Buttermilk (reg milk will work too)

1 egg

Some oil or bacon grease for the bottom of the cast iron skillet

mix together and you may have to put more milk in it...to get things to the "right" consistency (I make my mix wet)

NO SUGAR!!!

Put the skillet in a 450-or 500 degree oven to get the oil/grease hot....start the skillet in a cold oven...when the oven beeps at the right temp....pour the mixture in the skillet.  You wanna hear the sizzle.  Cook for about 15 to 20 minutes.

Now...add the butter or the honey goodness on your slice when its done and hot.  I always add some butter to my slice...Hubby laughs at me...but he is from Tennesse. (grin)

Hahahaha...Lots of folks put sugar in...I like the crunchy with butter...my blood sugar has issues with tho!!!

The ones that don't certainly take exception to me doing it!!!
 
That looks great. If there was not any Baking Powder in your mix I would suggest adding some. Additionally, since you are using Buttermilk you have to balance the Acid with 1/2tsp Baking Soda. This will also contribute to the rise but more importantly will raise the Ph so you will get a good Color on the finished Corn Bread. I have added 1 small can Creamed Corn for years it not only contributes to great corn flavor but does wonders for keeping the Corn Bread moist...JJ

I'm a Jersey boy but many of my Aunts and Uncles relocated to Tennessee, Mississippi, Florida and Texas. I learned the joy of Cornbread, Collard Greens, Grits, and real Texas Red at many family gatherings...JJ

Cornbread can be made in all forms.  BUT...to my tastebuds....sugar in it makes it cake!
