Was able to find some beef cheek at a Sam’s nearby. Trimmed last night and used rec teq Ben heifers dust.

Put in the RT 340 on lo for an hour or so, then bumped up to 250 until they got a good bark maybe 165-170 IT?

Put them in a pan with 2 cans Campbell’s beef consume, chopped onion, garlic, and a little bit of jalapeño.

Turned up to 275 and flipped them after 2 hrs.

Let it ride another hour or so and covered with foil for maybe another 45mi or so. Probed tender and let it get away a bit cause it was at 210 IT. Rested in the counter a bit and pulled by hand back in the pan with juice.

Overall they were great! A bit on the super smoky side for me. (used LJ mesquite blend pellets) Next time I will cover with foil sooner, or right away, or use a lighter wood.

That looks awesome! Last weekend, I made birria for tacos. Your barbacoa looks every bit as tasty. Nicely done.

They are hard to find here in northwest Indiana. I placed an online pickup for them at 3 different Sam’s Clubs. 2 were cancelled because they didn’t have it and luckily one did. Guess that will be my strategy from now on instead of swing it is a subtle in club and driving there for nothing.
 
I tried beef cheeks for the first time myself. I cooked them correctly as they were really tender my wife and daughter though almost had a mutiny they weren't fans. I used beer for the braising liquid which I didn't like. Don't know if they'll make the menu again at my house.
