Well yesterday was my first try at a brisket.  I have a brand new Traegar Lil Tex Elite.....I have zero complaints on how this came out.  I followed Traegars recipe for the most part.  I used mequite pellets and some pecan honey rub I picked up at Cabelas.

here it is at 7AM  (i should have started it earlier!)

here it is after 4 hours on the smoke setting

Here it is after 8 hours (4 on smoke, 4 at 225 degrees)

Boy, it really got stuck at 155 degrees around this point....it didn't want to move.......about at the 10 hour mark it started climbing again.....till she was does around the 12 hour mark.

Finished product
