Did my first trimmed brisket today. Harvest was officially done last night so time to celebrate with some smoke!!!

Flavor was good , but wasn't as tender as I would like. Had it on the pellet for around 4 1/2 hrs and brought it to 175. Then foiled it to 185. Gave it another 30 min. Uncovered to reform the bark.
 
Looks great.

I did my first trimmed yesterday. It took mine till the IT hit 207 before it was toothpick tender. When you insert a toothpick it should slide in like butter.

Perhaps leaving yours on longer will give you the tenderness your wanting?

Overall, it looks super juicy, nice smoke, and I love me some creamed corn that you have on the plate!
