Fired up the smoker then headed to the grocery store to figure out what was goin in it. I came home with a 3lb tri-tip. Rubbed it with Excalibur "Best steak and roast rub"? Smoked it at 240-265 with hickory, cherry, and mesquite mixture pulled it with an IT of 136 (going to cook a little longer next time, it was a little too bloody for the family) and threw it on the firebox grate to attempt a reverse sear (you can see in the pictures that I didn't sear it long enough). The taste and texture were phenomenal.. It was super juicy and tender!
