Trying to smoke some trout, I got a package of Hi Moutain brine mix, it says to dissolve in fresh water & brine for 10-24 hours rinse pat dry and smoke. the question I have is I see smokers on here bring their brine up to a slow boil, ( this doesnt say that) and then set overnight to form pellicle (this doesn't say to) So I left my fish in the boil less brine for 12hrs. rinsed off can I smoke the fish now or do I have to wait? or did i just screw up by not boiling the brine.
 
I don't boil my brine, just stir until all ingredients are dissolved  The pellicle helps adhere smoke to the fish. It can be formed in a few hours. Rinse the fish off post brine and pat dry. Let it sit in the fridge for a few hours on a rack or on your kitchen counter. Some use a fan to speed the process up. You should be fine. You may not get as much smoke flavor without the pellicle, but the trout will still be tasty.
