First timer here. Decided to go with 3 racks of ribs with Jeff's rub. Deep sixed some of the spicy parts though (2 year old loves ribs). After reading the forums for a few weeks i decided to use spare ribs cut St Louis style using the 3-2-1 method. Just put in the foil and i must say Im having a blast already. Everything is looking great already. I keep finding excuses to go out and "check" on the smoker (not opening the door too much of course). Will try to post pictures later. Feel like Im addicted already.:sausage:
 
Welcome aboard. Raised in Garland myself. I like to sit out and watch the cooker to make sure the thermometer doesn't move.  Of course this involves a nice pour of Maker's Mark and possibly a nice cigar just to be sure all is well.

First time smoker here as well! Received a Brinkman Barrell smoker for Xmas and I'm going to try it out on some babybacks later today. Just wondering what everyone's opinion on pre soaking woodchunks is

I don't soak mine...... There is a thread that talks about that already.
 
I used to soak mine...use chunks. I don't anymore. This last week..my chunks lasted longer...don't know if it was because of the colder temps outside or if it was because they were dry. Maybe I am finally learning how to get TBS!:biggrin:

Well my first time was an epic fail. Started the charcoal which stayed way to hot the whole time. Thought I put too many in so I took some out to get the temperature down and the temp still stayed too hot. By the time the temperature got down to 225 the coals were pretty much done. Thank god I have my weber at least I can grill my ribs and eat dinner.
