I'm thinking of smoke setting (160?) for about 30 minutes then 225 for an hour or so then crankin' the Traeger up to finish. What do you think?

I’ve cooked on a Weber for like 36 years. Pretty good with it I think. I know I can do better on this Traeger but just will take a little time to learn. I love the convenience of it. And the different wood flavors.
 
Pro Series 22. I really like it. One thing I’m wondering about is the controller that’s on the timberline series. I wonder if that thing can really get to500*. Mine gets up to 435 or so 440 once.

What was the process you ended up following? I've got a Traeger too, and I have been wanting to try some wings on it.
 
looks good but for crisp I have to hit 350,been told that brining and then smoking is great but have not tried,my chicken parts get crispy though at 350,might need to set them off bring up to temp then throw back on quickly
