Smoked some St. Louis style ribs for the first time ever today in my Weber Kettle, using the IQ Smoker device (also used Jeff's recipe for the rub). OMG - it turned out fabulous! Used the 3-2-1 method (3 hours on the grill smoking, 2 hours on the grill wrapped in aluminum foil, one hour on the grill without foil). Cannot believe I got this fantastic result from a Weber "GRILL". Really pleased. When I tried (several times) at the end of the cooking to pick up a half-slab of ribs by the bone - I COULDN'T - because the bone pulled completely (and cleanly) out of the moist and tender rib meat. Great "bark" and fabulous flavor. I am a "smoker" for good now!

Noe the adventure begins!  Stay on this forum and see all the great info and ideas start to make you want to try everything.  I have learned so much, and want to try out everyones suggestions.  Steve
 
My bad on no pics; I was so into trying to do everything correctly that I forgot the pics. Fuel: One chimney-full of Kingsford Competition Briqutes, mounded on the far side (from the ribs) of the grill, Smoking Agent: soaked mesquite chunks. I didn't have any way to "hold" my ribs upright (I know there is such a device) so I just lay them directly on the grill grate. Anyone have any advice about this?
