First time making jerky on Vision

I have made jerky in my oven several times with fantastic success. Tomorrow I plan on using my Vision. Any tips on smoking jerky on the kamado?

Smoke at a low temperature than raise the temp of the meat to 170F ish for 30 minutes to kill harmful bacteria.....
Or if you use a liquid to add flavors to the meat, simmer the meat in the liquid at 170ish for 30 minutes to kill any harmful bacteria, then cool the meat and smoke at 110-120F...
