My first attempt at a brisket.  5 pounder took about 6 hours.  A little over done and dry.  But the flavor was on the money.  Next time, I will pull at 170 instead of 185 for slicing.

By the way, the WSM has been running steady at 225 for 12 hours now and is STILL going strong.  18 lb bag of Trader Joe's natural wood briquettes - $6.99.  I'll let you know when the temp falls under 200.
 
Looks good. Congrats on your first brisket. Was it just a flat?
 
Holy Smoke!  The WSM is still kickin at 225!!  How long will it go?  I just might have to go to bed before it ends.
