I am reserving this post to my final outcome...2 large back ribs that are currently rubbed and in the fridge overnight.   I will be starting about 12:45PM. 

I have a bunch of pear wood to use and also soaked some for a few hours.  So much back and forth on water logging the logs, not the small twigs, is too frustrating and I do not know what I would like to settle with.  All I know is I hear the water only absorbs about 4 inches as well as not burning fast.  When I did a test run, my cut logs were just going too fast.

Pear wood must be pretty porous for water to penetrate 4". Some guys have done tests soaking Hickory for up to 48 hours and only getting between 1/4 and 1/2" penetration...JJ
