I am wanting to build a smoker for sausage and such. I have an old digital 240v wall oven that has a bad board. My plan was to use the element (and possibly the bar fan if needed). I was thinking I would get a manual thermostat to control temperature with from Amazon . I plan to use 304 stainless .090 (13 guage). Interior dimensions 20" x 24" x 36" tall, with a 3" vent on top and 2 - 1" x 4" intake slots.

1. Will this element be big enough?
2.Will this size oven fit 30lbs of summer sausage?
3. How much insulation will I need?
Will aluminum faced board insulation (from Menards) work?
