First Smoke with the MES

Everything went surprisingly well! I decided to break it in with some ribs for my first time. I used a simple rub with yellow mustard and let them sit in the fridge overnight. I smoked two racks that I had to cut in half to fit properly. One rack I used the 3-2-1 method and the other was just Apple wood smoke. Both turned out great. I knew I would be posting here so of course I took pictures!
Three hours in.
Foiled with maple brown sugar simple syrup. I also applied it to the non foiled ribs.
Removed the foil and added some homemade sauce for the last hour.
Time to rest.
Time to eat!
All in all, I am very happy with the result and MES. The non foiled held onto the bone, but released nicely. The foiled were not quite FOTB, but the wife was still happy. The MES held temp well, and smoked well with dry chips added about every hour. The best part? The wife asked what I was going to smoke next!
 
Those sure look good. Nice first smoke. Get yourself an AMNPS and you won't have to keep adding those chips.
