Hi everyone,
I did the mods on the old Brinkman ECB I found in my moms garage, I put a chimney on it made a stand for the fire pan from a plant stand I got a Menards and put a grate in it to let the coals breath and added a good thermometer. I did some testing with the Minion method and ended up putting the charcoal in a circle in the pan and dumped about 10 light coals at the end of the circle it stayed just under 225 for about 3 hours so was happy with that. I did a 6# brisket last night and turned out great it took about 7 hours, I put a simple rub on it and got it up to 165 degrees then wrapped in foil and put it back on till it hit 200 it came out very tender and moist.
