First Smoke! :O

I smoked my second butt last week, and it was less impressive than the first.  The only changes were that this one was the boston butt cut, and the first one was the picnic.  Surely, that wouldn't have taken away from the flavor?!?

The second change, and I believe this one is the culprit, is that the first time I used only Jack Daniels barrel chips for smoke.  The second time, I used mostly some applewood, with only a few JD chips.  I think the JD chips added a really nice flavor the first time, and not enough the second time.

Does anyone have any insight on this?

Smoke flavor is a personal preference. I really like apple and other fruit woods when smoking pork. I like cherry and hickory, and mesquite for beef. For things like fish and cheese I like the fruit woods, alder, pecan. For bacon I like the fruit woods, hickory, maple. I think you need to find what you like and go with it! Also make sure its TBS!!!
 
Yes!  I've been pretty proud of myself for achieving and maintaining the TBS.

I tried some smoking chips while grilling once, years ago.  It didn't go well because I didn't know about TBS!

I'm all over it like smoke on a butt, now, though!
 
Looks great....except for the corning ware....OMGoodness....go to the store quick and get some SOS pads!

There are some great foil pans you can get at the grocery stores...and cheaper if you get them at Sam's or Costco.  I use them all the time!

Dollar stores sell disposable roasting pans as well!
