Fired up the Brinkman at 5:00 am...  meat went on at 6:00... smoked a rack of spare ribs, whole chicken and a brisket...  i must say it was delicious!!  had a hard time maintaining the heat... finally got in a grove at about noon..  chicken was pretty dang good, but a hair on the dry side..  bones came right out on the ribs except for in the middle where meat was still tight.. pulled the brisket at 5:30...   absolutely amazing!  just fell apart and the knife cut through like BUTTAH!!! 

~apple and mesquite wood..   sealed the deal with some oak for the last 4 hours...

~wrapped in foil halfway through

~homemade dry rub the night before

~homemade BBQ sauce

all in all... i'd say some beginners luck!  overall im extremely satisfied and so is the rest of the family..  :-)
shout out to SMF and S-M.com.  Also thanks to some local friends who gave me a couple page worth of notes to "get me started"
