Smoked a tri-tip this afternoon at between 175 and 225 for 1.5 hours to just hit 125 interal after resting. I used Oak and Applewood, though the oak I bought turned out to be green so didn't burn very well at all.
Rub is a custom blend which contains kashmiri chilli powder (ut a little too much in, it's quite hot!) but it set a really nice colour.
