So I set up and seasoned my new Smoke Vault today.  I was eager to give it a whirl so I dug into my freezer and found a 2lb piece of bottom round from our most recent beef order.  I pulled together a pretty random rub using what I could find in our spice cabinet (sage, thyme, rosemary, salt and pepper).  I threw our roast on at 220 for ~3 hours, pulled at 140 and let rest for 45 minutes.  I broke out our forgotten slicer and sliced it up pretty thin.  This was my first smoke, and I am in love with the results.  This came out better than I had hoped, I am hooked.  I can't wait til the next smoke.
