So two weekends ago I had my first attempt at smoking. It was a learning experience to say the least. That being said, everything turned out pretty darn tasty... I started the day with some sausages, to get the feel for maintaining temperature, then moved on to beef back ribs. I had marinaded them in coffee and coke overnight, and then applied my own coffee/spice rub before I threw them on... sorry, forgot to take pics of the preparation...
note the water pan under the meat... didn't think about dripping fat/juices
so it turned into a grease pan. had them on 2.5 hours, actually ran a little bit hot, around 250, then let them sit in aluminum foil for 30 minutes...
the results...
they were a little tough and not quite as smokey as i hoped, but like i said, they were good! Did some butt steaks for dinner then, they had better smoke flavor but i dried them out a little.
