Hello SMFers,
I've been reading your posts on STR, planning it out, looking up recipes. Bought one from my local Sam's Club. Put it in the MES at 1:40pm, and thought it'd be ready by 4 or 5. Nice, right?

Then I looked again at the packaging for the exact poundage for the record I'm keeping (which was suggested here at SMF, thank you guys;)) and, lo and behold!... THIS ROAST IS 8.66 POUNDS! It is not the 2 to 3pd roast I was reading about and preparing for during my research! LOL!

Here's the truth... the thing was $2.84 a pound and I confused that with the weight! I've been buying meat for over 20 years now, so...lol... there's no excuse! Guess I was so set on the recipes for 2-3pd roasts I've been looking at online that it overrode my senses.

So...er... I'm going to feed it peach wood every hour (nice TBN, but I can see why the AMZPS would be nice to have right now... maybe I'll stop feeding it after 4 hours...) and smoke it until it reaches 145 IT...whenever that will be...

Edit: 4:34pm smoker at 250. Roast is reading 139 IT...

cant wait to see some pics.

I've got starting pics and hoping to get finished pics, I'm having problems with the camera on my phone, and I still have to figure out how to post pictures here. I can't just share pics directly from my phone to SMF and, since it isn't working right, I haven't looked int how to do it correctly yet. So, although I would really like to post pics, I can't guarantee anything.

Sounds like a cut that would taste good off the grill.

I'd like to try to reverse sear it with the one remaining good burner on the gas grill I have.
