Well today was the day I tried to figure out what the heck I bought this GMG for! Did a couple racks of ribs. Never smoked anything in my life, not even that good at the gas grill, but we gave her a go nonetheless! First rack was done in Jeff's rub, and the other was marinated as per the GMG recipe Dynamite Baby back ribs. Both told me different ways to cook them, so I didn't do either! Haha, was going to do the 3-2-1 I see many of you talking about, but then some said for back ribs to do a 2-2-1, so I comprised and did a 2.5-2-1! Here's them all ready to go on,
And actually on the grill
The racks were very different, which was a mistake when trying to compare, top one was from the local CoOp, and the bottom one was a third party cryo the CoOp sells. The cryo meat was definitely more even, whereas the CoOp had some real thick parts. That's my fault for not knowing the first thing about how to pick out meat.

Ready for eating, was going to do the bend test, but the rack just fell apart when I lifted it! Haha
And here's a little smoke ring
I had a couple other pics of the smoke ring that I got the wife to take since my hands were messy, but forgot to get her to send them to me.
All in all it was a pretty successful first try at ribs. Definitely came off the bone clean, probably a little overcooked as I was trying to get the thick part up to temperature. Didn't have an instant thermometer so went and bought a cheap one at Canadian Tire, well if you have 3 minutes to wait it might actually get to a stable temp, so just relied on the factory probes until I buy something better.
Sorry for all the pictures, but on my boating forum we always have the saying "pics or it ain't true!" So I carried that over to here.
Feel free to give helpful advice, I'm on here to learn, not show off! (Pretty hard to show off when you don't know what you did right or wrong and probably couldn't do it again!! Hahaha)
