First MES smoke Qview and a question...

    Here is some Qview of my Sunday afternoon smoke spare ribs cooked using 3-2-1 with some homemade backed mac and baked beans.

    My question is if I were to use a mop could i just pour the mop into my water pan to keep it warm. Or should i keep my mop on my stove top like when I cook brisket on my open pit.

    I would not put it in the water pan as it will boil out.

    You could put it in a drip pan below the meat and do it that way, and kill 2 birds with one stone.
