ended up abandoning charcoal for pure wood on this venture....I think I like the results but it was tricky as heck trying to keep a steady 225. fluctuated a bit through the process from 225 to 205 to 255. for the most part though she came through with no mods.  smoked four racks of back ribs and a 7lb boston butt bone in. used the 2 2 1 method with sea salt and peppercorns for the ribs, the butt is currently foiled up and still cookin
